Here at Rooster Brother we devote a lot of time and attention to the whole process of selecting and roasting coffee. Our standards of freshness are the strictest in the business. We cup all green coffee before we buy it. Our sample roaster and brewing lab allow us to evaluate green coffee thoroughly. Each roast is carefully matched to the specific variety of coffee. Monsooned Malabar is an aged coffee.  The beans are spread out on tables for the whole monsoon season on the Malabar Coast of India, and then dried in the sun.  It has a chocolatety bitterness and a touch of brininess with very low acidity.  This coffee has a passionate following; we ship it all over the world.

Sumatra - Boru Batak

Boru Batak is from the Lintong area, it is grown on small farms on the southern shore of Lake Toba.    It has a syrupy body which is characteristic of the region, great acidity for Sumatra, clean with a rich leather flavor, a hint of cocoa and a long lingering finish.

Ethiopia - Yirgacheffe

  This Yirgacheffe, consisting of various heirloom Ethiopian varieties, is delivered to The Reko Washing Station in Kochere by over 300 small shareholder producers. The coffee is grown at 1800-2000 masl, it is fully washed and then dried on  raised bed for up to two weeks.
